What it is

A matcha specialist making ready-to-drink oat matcha lattes in a can, alongside ceremonial-grade powder, produced in Byron Bay and sold through stockists nationally. Its own site is a shop first and a location second.

That is a pattern worth naming, because this register contains several versions of it. A business starts as a room in Byron, the brand travels further than the room does, and the physical site becomes partly a showroom for something you can buy in a supermarket in Melbourne. The roastery works this way. So does one of the distilleries.

Why matcha, and why here

Byron has had a health-food economy for fifty years, longer than it has had a restaurant scene, and the vocabulary that came out of it — the bowls, the adaptogens, the caffeine alternatives — is now simply how a large part of the town's menus are written.
