Ember Byron Bay, Restaurant Dorsia and Fleet at Brunswick Heads are the three. Ember works a grill; Dorsia is Modern European; Fleet has changed format at least once and currently hosts a residency rather than the fine-dining service it built its name on, which is exactly the kind of thing a guide written in 2018 will not tell you.
That is the whole category. A page that stretched it to fifteen would be padding, and padding is how you end up in a restaurant that was never trying to be what you wanted.
What sits just outside it, and is often the better booking
The interesting cooking in this shire mostly is not formal. 16 kitchens work in Modern Australian, Mediterranean, native Australian or farm-to-table registers, and several of them are more ambitious than the 3 rooms above without the tablecloth.
Raes on Wategos is the clearest case: a hotel dining room on the only beach in Byron Bay you would call secluded, cooking at a level that would carry a much stiffer room. Karkalla works with native ingredients. Frida’s Field at Nashua and The Farm at Ewingsdale both cook what they grow, which is a claim plenty of restaurants make and these two can actually support.
If you are booking one meal in the shire and want it to be the memorable one, the honest recommendation is Raes for the setting or Frida’s Field for the cooking, ahead of any of the three formal rooms. That is a preference, not a hedge.
What a small market does to the top end
A city carries a formal restaurant on repeat business from people who live there. A town of nine thousand with a very large summer cannot, so the rooms at this end are built around a season, and that shapes them more than any chef’s ambition does.
The visible effects are three. Rooms are small, because a big one is empty in June — Dorsia seats thirty-two. Formats change, because a format that worked in one summer may not pay in the next, which is what has happened at Fleet. And the kitchens that most reliably cook at this level are frequently not in Byron at all: Frida’s Field is at Nashua, Fleet is at Brunswick Heads, and both are a drive.
For a visitor this is mostly good news. It means the gap between the best cooking in the shire and the third-best is narrow, and the price gap is narrower still.
