What it is
A regenerative farm, restaurant and event space in the hinterland, about twenty-five minutes from central Byron and ten from Bangalow. It serves set-menu lunches across a short weekend run and is otherwise a working farm and a wedding venue.
The menus turn over every six weeks against the market garden, the food forest and the paddocks, topped up from other producers in the Northern Rivers. That is farm-to-table in the literal sense, not the marketing one: the distance between where the vegetable grew and where it is plated is measured in metres.
Why it is a lunch and not a dinner
Three things point the same way. A set menu needs a known number of covers, which suits a booked lunch service. A farm is worth seeing in daylight. And the drive home from Nashua after a long lunch with wine in it is a booked car, which people will do at four in the afternoon and resist at eleven at night.
It is one of only 2 venues in the register that publish a price range on their own site, which for a set menu is the honest thing to do and almost nobody does.
What a hatted kitchen on a farm actually changes
A chef's hat is an award and this guide does not track awards, for the reason set out on the fine-dining page: they lag the kitchens by a year and change for reasons unconnected to whether tonight will be good.
What is structural, as against reputational, is the six-week menu cycle against the farm's own harvest. That is a constraint most restaurants would refuse, because it means the dish that worked cannot simply stay on. It is also the clearest example in the register of a kitchen whose menu is decided by the paddock and not by the market.
The three things a farm lunch has to publish
Its own site exposes a table-booking system, publishes its menus and publishes a price. Only 2 venues in this register do the last of those, and for a set menu an hour inland it is the one that counts.
None of that is courtesy. A booked set menu at Nashua is a car, a driver and an afternoon committed before anybody tastes anything, and a business asking for that commitment has to answer all three questions in advance. A room in town can leave every one of them to the door.
