of chef Craig McFarland at St Elmo.
A Byron boy originally, Craig trained under renowned chef Damien Pignolet at Bistro Moncur and has seasoned and spiced at other esteemed Sydney establishments Velero, The Tilbury Hotel and Acqua Luna.
Craig’s travels through Spain ignited his passion for the cuisine that now grace the menu and tables at St Elmo. “It’s the simplicity of fresh, flavoursome ingredients and the culture of sharing good food and wine with family and friends that I love”, Craig says. “To find a place where these tastes can be accompanied by such an amazing wine list in such a beautiful region really is the best of all worlds!”
